Ask at the counter for enough lamb kofta skewers for four people. They come already marinated, so they go straight onto the grill.
Give the kofta a good char over medium-high heat. Turn them often so they colour evenly and stay juicy inside.

Lamb Kofta Skewers$29.99per kilogram
Method
- Heat the barbecue or a grill pan to medium-high. Lightly oil the grill.
- Cook the kofta for 10 to 12 minutes. Turn them every 2 to 3 minutes so they brown all over. They come already marinated, so add no extra salt or spice.
- Push a thermometer into the thickest kofta. It must read 75°C in the centre.
- Warm the flatbreads on the cooler edge of the grill for 30 seconds a side.
- Slide the kofta off the skewers if you like. Fill each flatbread with lettuce, tomato, onion and kofta.
- Spoon the tzatziki over the top. Squeeze the lemon over the kofta.
Serve it
Serve straight away while the flatbreads are warm. Put extra tzatziki on the table.
