From the shop

Ask at the counter for enough BBQ plum pork spare ribs for four people. They come already marinated, so add no extra rub or sauce.

Cook the ribs low and covered first so they go tender. The hot finish only sets the glaze. Leave them in too long and the sugar burns.

Method

  1. Heat the oven to 150°C. Lay the ribs in a roasting dish in one layer.
  2. Pour the apple juice around the ribs, not over them. Cover the dish tightly with foil.
  3. Cook for 2 hours, until the meat is fork tender and pulls back from the bone.
  4. Take off the foil. Turn the oven up to 210°C.
  5. Cook uncovered for 10 to 15 minutes, until the glaze is sticky and dark at the edges. Watch it closely at the end.
  6. Rest the ribs for 10 minutes. Cut between the bones. Scatter the spring onion over the top.

Serve it

Serve with steamed rice and a crunchy slaw. Put paper towels on the table.
