From the shop

Ask at the counter for enough maple pork steaks for four people. They come already marinated. Add only pepper, because salt or spice fights the maple.

A maple marinade colours fast. Cook over medium heat, not in a smoking pan, so the outside browns before it burns.

Method

  1. Heat the oven to 200°C. Peel the sweet potatoes and cut them into 3 cm pieces.
  2. Toss the sweet potato with 1 tbsp of the oil on a lined tray. Roast for 30 minutes, turning once.
  3. When the sweet potato has 15 minutes left, heat a frying pan over medium heat. Add the rest of the oil.
  4. Cook the pork steaks for 3 to 5 minutes a side, until a thermometer in the thickest steak reads 63°C.
  5. Rest the steaks for 3 minutes on a warm plate.
  6. Boil the beans for 4 minutes while the pork rests. Season the beans and sweet potato with pepper.

Serve it

Serve the steaks on the sweet potato with the beans. Spoon any pan juices over the pork.
