Thigh is the cut to use when the timing might slip. It has enough fat through it to stay good even if it goes a few minutes past. Australian chicken.
Grill, roast, curry, or throw it in the slow cooker. It handles all of them without complaint. Chicken is done at 75°C right through the thickest part.
