About this cut
Comes ready to cook. Start it in a hot pan to colour the outside, then finish it in the oven so the middle cooks through without the outside going too far.
Rest it a few minutes before serving. Ask at the counter if you want it done a particular way. Chicken is done at 75°C right through the thickest part.
