About this cut
Left whole so it roasts at one pace and looks like something when it lands on the table. Score the fat, season it hard, cover the exposed bone ends with foil so they do not scorch, and start it in a hot oven. Australian lamb.
Twenty-five to thirty minutes will get you pink in the middle on most racks. Rest it ten minutes, then carve between the bones.
