About this cut
Lamb breast is fatty and full of flavour, and slow heat is what it needs. Low oven for a couple of hours, then crank the heat right at the end to crisp the outside. Australian lamb.
Roll and stuff it if you have the time. Either way, do not try to cook it fast.
