About this cut
Cubes of boneless lamb on skewers, ready for the barbecue, so all you have to do is get the grill hot. Two or three skewers is a serve, and a kilo feeds four. Lamb takes a little more heat than chicken before it dries out, but not much, so they want turning rather than leaving. Made in the shop from our lamb, sourced from Cowra in the Central West of NSW.
Barbecue, grill or a hot pan. Turn them often so all four sides colour and nothing catches, about eight minutes in total. Cook it through to 75°C at the thickest part. There is no safe rare on a made-up line. Rest them a moment before serving, and slide the meat off the skewer for the kids. Want it marinated? Pick one of our shop-made marinades when you add it to your order.
