About this cut
Lamb riblets coated in our house marinade, ready to cook.
Roast them at 180°C for about 45 minutes, or cook them low on the barbecue until the fat renders and the edges catch. Turn them once.
Riblets are the small ribs cut from the lamb breast. They carry a fair amount of fat, and slow heat renders it out. Line the tray with baking paper, because the marinade catches on a bare tray. They are ready when the meat pulls away from the bone. Do not add more seasoning, because the marinade does the work. Serve them with a green salad, flatbread or roast potatoes.
Best used for
Sticky ribs, oven cooking, BBQ finish, sharing plates.
