About this cut
Our wagyu beef burger patties took first prize for burgers at the 2026 Hawkesbury Show. Made in the shop, six to the kilo, sold by the kilo.
Cook them on a hot barbecue or pan for four to five minutes a side, and turn them once. Burgers are done at 75°C in the centre. Rest them a minute before they go in the bun.
Take them out of the fridge 15 minutes before they cook. Do not press them flat on the grill, because that pushes the juice out. Put a slice of cheese on each patty for the last minute. Build the burger on a toasted bun with lettuce, tomato and onion.
Keeping: about two days in the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is best inside two or three months.
Gluten free.
