About this cut
Comes rolled, so there is nothing to do but cook them. Brown them in a pan first to build a crust, then drop them into the sauce to finish.
Cooking them through in the sauce alone works, but you lose the colour and most of what it brings. Mince and sausages are done at 75°C right through.
