About this cut
Cubes of beef on skewers in a red wine marinade, ready for the barbecue. The flavour is already on, so there is no prep left to do. Two or three skewers is a serve.
Cook them on a barbecue, grill or hot pan over moderate heat, and turn them often, for about eight to ten minutes in total. Moderate heat stops the marinade catching before the meat is cooked. Cook it through to 75°C at the thickest part. There is no safe rare on a made-up line. Do not add more seasoning, because the marinade does the work. Serve them with a salad, rice or flatbread.
