About this cut
A leg of pork with the bone taken out, then rolled and tied with string so it roasts evenly and carves into neat round slices. It is a 2kg piece, priced at $18.99 a kilo. This is Australian pork.
If it comes with the rind on, dry it and rub it with salt. Roast it in a hot oven for twenty minutes, then turn the oven down to moderate for about an hour and a half. A rolled roast must be cooked right through, so check that the centre reaches 75°C. Rest it fifteen minutes under loose foil, take off the string and carve it.
Keeping: three to four days in the coldest part of the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is good for up to six months.
Gluten free.
Best used for
Sunday roast, roast pork rolls, cold cuts.
