About this cut
Comes crumbed, so your kitchen stays clean. Shallow-fry in oil that is already hot. Put it into warm oil and the crumb drinks it up and goes heavy.
Three or four minutes a side depending on thickness. Drain it on a rack, not on paper, if you want the crumb to stay crisp.
