Whole wings, so you can split them or leave them as they are. Either way, they want high heat and a rack so the air can get underneath. Australian chicken.
Dry them off before they go in. Wet skin steams instead of crisping, and crisp skin is the point. Chicken is done at 75°C right through the thickest part.
