About this cut
Chicken flattened and crumbed in the shop, so the messy part is already done. A kilo is four to five schnitzels. It is the dinner that ends an argument: chips and salad, a roll with coleslaw, or a parmigiana under the grill. The crumb protects the meat, so it forgives a minute either way better than a bare fillet does. Made in the shop from our free-range chicken.
Shallow-fry in oil that is already hot; into warm oil and the crumb drinks it up and goes greasy. Three minutes a side, until the crumb is golden. It also bakes in a hot oven if you would rather skip the oil. Chicken is done at 75°C right through the thickest part. Drain it on a rack, not on paper, and the crumb stays crisp. A squeeze of lemon and it is done.
