About this cut
The thigh is the dark meat off the leg, sold as boneless fillets. It has more fat through it than breast, so it has more flavour and it stays good if the timing slips. A kilo feeds five. It is the cut for the curry, the tray bake and the slow cooker, and it takes a hard grill too. This is free-range chicken, Australian grown.
Pan, grill, barbecue, oven or the slow cooker; it handles all of them. Five to six minutes a side on the grill, or twenty-five minutes in a hot oven. Chicken is done at 75°C right through the thickest part. Rest it a few minutes, then slice it across for a salad or leave it whole on the plate. Want it marinated? Pick one of our shop-made marinades when you add it to your order.
Gluten free.
