About this cut
A sausage that works two ways: grilled whole, or squeezed out of the skin as the base of a pasta sauce. A kilo of the meat carries pasta for six, so it is the one to buy when you are not sure which dinner it is. Made in the shop.
On the grill, moderate heat and patience, ten to twelve minutes with a few turns. For a sauce, brown the meat hard first and build the sauce on top of it. Sausages are done at 75°C right through. Let them sit a minute before they go in the bread.
Keeping: about two days in the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is best inside two or three months.
Gluten free.
Best used for
Pasta, tomato sauce, tray bakes, BBQ.
