About this cut
Butterflied open, so each piece is thin, even and cooks through in a couple of minutes. They are lean, with almost no fat to hide behind, so the cook is short and the pan is hot. It is the pork for a weeknight: dinner is ten minutes from the first sizzle. They take a crumb well if you want a schnitzel. This is Australian pork.
A hot pan or grill, oiled, and two minutes a side, no more. Have everything else ready before they go on, because there is no time once they do. Pork is done at 63°C in the centre after a three-minute rest; a faint pink is right. Pull them the moment they are done, and the rest finishes them. Want it marinated? Pick one of our shop-made marinades when you add it to your order.
Keeping: three to four days in the coldest part of the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is good for up to six months.
Gluten free.
