About this cut
Seasoned through the mix and sold by weight, so two each with mash and gravy is the standard feed. They forgive a busy cook: a couple of minutes over does no harm to a rissole. Made in the shop.
Moderate heat in a pan, on the barbecue plate or under the grill, five to six minutes a side. Leave them alone until they release by themselves, then turn once. Cook it through to 75°C at the thickest part. There is no safe rare on a made-up line. Pressing them flat with the spatula only squeezes the juice out.
Keeping: about two days in the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is best inside two or three months.
Best used for
Mash and gravy, BBQ, burgers, family dinners.
