About this cut
Veal is young beef: paler, leaner and with less connective tissue than a grown animal. That is what makes it delicate, and why it dries out fast. It comes tenderised and cut thin, so the cook is short. Crumb it at home if you like. Good with chips and lemon, in a roll, or topped with a fried egg.
Hot oil in a wide pan, two minutes a side, and out. Cook it through to 75°C at the thickest part. There is no safe rare on tenderised meat. Any longer and you lose what makes it worth buying. Drain it on a rack, salt it while it is still hot, and get it to the table with a lemon wedge.
Allergens: ask at the counter before you buy.
Best used for
Schnitzel, lemon and parsley, parmi-style dishes, sandwiches.
