About this cut

This is the shin and the other hard-working muscles, boned out and full of the connective tissue that melts down into the liquid. That is what gives you a gravy you cannot get any other way. It is the cut for a stew, a pie or a slow-cooker curry, and the cheapest way to feed a table well. This is grass-fed Angus beef, sourced from Cowra in the Central West of NSW.

Do not rush it. Brown it in batches, then liquid, lid on and a low oven for three hours, or the slow cooker all day. It is done when it is fork-tender, about 90°C inside; time matters more than the number. A fork should go through without effort. It is better the next day, so make more than you need and freeze the rest in its gravy.

Gluten free.
