About this cut

Our mince is about 5% fat, minced straight from blade steak, so it is lean as it gets. Bolognese, burgers, rissoles, meatballs, a proper cottage pie: it handles the lot without fuss. Mince forgives everything except a crowded pan, and it stretches further than any steak. Buy what the week needs and freeze the rest flat in bags, so it thaws in an hour. This is grass-fed Angus beef, sourced from Cowra in the Central West of NSW.

Brown it hard in a hot pan rather than stewing it, and it pays you back in flavour. Cook it in batches if the pan is small, eight to ten minutes until the pink has gone. For burgers, shape them gently and leave them alone in the pan until they release. Mince is done at 75°C right through. Rest a burger a minute and it holds its juice.

Gluten free.
