About this cut
The breast is the lean white meat off the front of the bird, sold boneless as fillets. A kilo is four to five fillets. It is even and quick, and it takes any flavour you put on it. The one thing it does not forgive is overcooking: lean meat dries out fast once it is through. This is free-range chicken, Australian grown.
Pan, grill, barbecue or oven. Butterfly the thick end so the fillet cooks at one pace. Pat it dry rather than rinsing it, so it browns instead of steaming. Five to six minutes a side in the pan, or twenty to twenty-five minutes in a hot oven. Chicken is done at 75°C right through the thickest part. Rest it five minutes under foil before you slice it, and it stays juicy. Want it marinated? Pick one of our shop-made marinades when you add it to your order.
