About this cut
Bone-in chops cut for one job: a hot barbecue and not much thought. They are the weekend standard, priced to feed a crowd, and they forgive the cook who is talking while the plate is on. The fat is what makes them taste right off a hot plate, so do not trim it off before they cook. This is Australian lamb, sourced from Cowra in the Central West of NSW.
Get the plate or the grill hot before they go on, and leave them alone long enough to colour. Three to four minutes a side. If the fat flares, move them to a cooler part of the grill rather than pulling them off. Pull it between 58°C and 62°C and rest it; it climbs a few degrees as it rests. Rest them a few minutes before they hit the plate. Want it marinated? Pick one of our shop-made marinades when you add it to your order.
Keeping: three to four days in the coldest part of the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is good for up to six months.
Gluten free.
