About this cut
Big flavour in a mince, and the start of koftas, burgers, meatballs and a shepherd's pie worth the name. It takes bold seasoning: cumin, garlic, mint, lemon, and it stretches further than any chop. Buy what the week needs and freeze the rest flat in bags, so it thaws in an hour. This is Australian lamb, sourced from Cowra in the Central West of NSW.
Brown it hard in a hot pan rather than stewing it, in batches if the pan is small. Eight to ten minutes, until the pink has gone. For burgers or koftas, work it with a light hand and leave them alone in the pan until they release. Mince is done at 75°C right through. Rest a burger a minute and it holds its juice.
Gluten free.
Best used for
Kofta, burgers, meatballs, shepherd-style pies, stuffed vegetables.
