About this cut

Cut thin on purpose, so it cooks almost the moment it touches the pan. Good in a sandwich with onions, or on a plate with chips when there is no patience for a longer cook. It is also the steak to bash out flat for a schnitzel. It forgives nothing but a fast cook. This is grass-fed Angus beef, sourced from Cowra in the Central West of NSW.

Get the pan very hot, oil the steak rather than the pan, and give it one minute a side, no more. It is too thin to probe, so judge it by eye: browned outside, just cooked through. Any longer and a thin steak goes tough. Have everything else ready before it goes on, because there is no time once it does.

Keeping: three to four days in the coldest part of the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is good for up to six months.

Gluten free.

Best used for
