About this cut
Sold by weight, so a kilo is a big pot of them, with the seasoning already in the mix. They are for the pan first and the sauce second, and through pasta a kilo feeds five to six. Made in the shop.
Brown them in a hot pan for about eight minutes to build a crust, then drop them into the sauce for another fifteen to finish. Cook it through to 75°C at the thickest part. There is no safe rare on a made-up line. Cooking them through in the sauce alone works, but you lose the colour and most of the flavour that comes with it.
Keeping: about two days in the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is best inside two or three months.
Best used for
Pasta, meatball subs, tomato sauce, oven bakes.
