About this cut

A cutlet is one rib of the rack, cut through so each has its own bone and the eye of the loin on the end. Small and quick, the chop to eat by hand at the barbecue; it dries out if you forget it. Want the rack left whole for roasting? That is the Lamb Cutlet Rack (Whole, Uncut), a separate product. This is Australian lamb, sourced from Cowra in the Central West of NSW.

Grill, barbecue or a hot pan. Two to three minutes a side over high heat. The bone tips catch on a hot grill, so keep them to the cooler edge or wrap the tips in foil. Pull it at 55°C for medium-rare or 60°C for medium, then rest it; it climbs a few degrees as it rests. Rest them five minutes, and serve them pink. Want it marinated? Pick one of our shop-made marinades when you add it to your order.

Keeping: three to four days in the coldest part of the fridge. Freeze it the day you buy it if you will not get to it; frozen, it is good for up to six months.

Gluten free.
